Green plantain is a great source of resistant starch. Unlike regular old carbs, resistant starch is a special carbohydrate that doesn't spike blood sugar levels and acts as a prebiotic, which makes it great for your gut health! So you can eat the whole stack! :)
To make the pancakes or waffles, all you need is water, an egg*, a tablespoon of oil and a hot griddle! I like to use a crepe pan by DeBuyer.
* sparkling water is a nice egg replacement that doesn't alter the texture as much as banana or flax! Use sparkling water in place of the regular water and add an additional 1-2 Tblsp to act as the egg.
You will get approximately 20-25 four-inch pancakes out of the entire bag!
