Paleo Pancake & Waffle Mix
If pancakes were clouds, but with nutrients that fuel your busy day.
Gluten-Free, Grain-Free, Nut-Free, Dairy-Free, Sugar-Free, Paleo and can be made vegan and AIP re-intro.
Green plantain is a great source of resistant starch. Unlike regular old carbs, resistant starch is a special carbohydrate that doesn't spike blood sugar levels and acts as a prebiotic, which makes it great for your gut health! Resistant starch also forms something called butyrate, a short-chain fatty acid that aids in strengthening your brain and gut health, leading to easier weight management(and more!)).
To make the pancakes or waffles, all you need is water, an egg*, a tablespoon of oil and a hot griddle!
*you can substitute the egg with a flax egg, or applesauce for vegan or AIP version. The substitution does change the texture of the pancake, making it less airy.
Ingredients: green plantain flour, arrowroot, coconut flour, baking soda, cream of tartar, sea salt.
You will get approximately 20-25 four-inch pancakes out of the entire bag!

I love these pancakes! They keep me fueled for all of the activities I enjoy and are so delicious!
We don’t eat pancakes much, but decided to try Wildflora pancakes.....all kinds of healthy foods, without the ingredients that our Great Grand daughter is unable to eat! The smell of a nut is enough to send us to the Hospital with her!
On trying your recipe, we were just delighted to find it just delicious and better tasting than most of the pancake mixes we have used. So fluffy, light and such great taste, too.
